First time we had a bacon cheddar burger together I stopped the waitress and said, “What the!!!” Think the cook forgot something maybe? Ms. HogSS graciously told the waitress that it was perfect and then informed me of her gluten allergy. I couldn’t help but laugh at this awesome burger with all the trimmings with no bun? Apparently she has a bad reaction but seen here eat plenty of gluten…I’ve said too much.
A bunless burger is A Thing these low-carb days (I get the purpose was no gluten in MRSHBSS’s case). The thing that made me double-take was hearing an Indian guy order “one Big Mac, no meat please”.

As for saying too much: yeah, probably? A young woman told me she is lactose intolerant. Then literally less than five minutes later that she drinks lots of chocolate milk. And not the “Lact-Aid” kind with the enzyme added to break down the lactose for you. I figured that “okay” followed by silence was the best response. That said, the prevalence of all sorts of allergies and intolerances is going up. While there is self-diagnosis for various purposes (attention seeking, being “fashionable”, victimhood culture, etc) it’s probably real. I have no idea why, though I can think of a number of tinfoil hat theories (half of which will turn out to be true in five years).
Broadcasting your victimhood while ordering food is a woke trend. It’s like ordering a vat-grown hamburger. In much the same way as announcing pronouns, it lets everyone around you know that you’re a turd.

If it was a simple cause and easy solution, our culture wouldn’t be grasping at so many fad diets and weight loss meds. I have an easy way to distinguish on the allergies: if they don’t mention it until food comes up, ask where we’re going ahead of time to check the menu, are polite and looking for a way to work around it, will have alternate food available… I believe them.
If they have hair colours not found in nature, and try to proselytize socialism as well as “allergy” du jour at me, I don’t believe them, but will politely play along with their insanity and inanity as needed for minimum possible interaction.

I say this as someone whose purse contains dedicated places for the inhaler, the epi pen, the chewable benadryl (for when swallowing doesn’t work, but sublingual still does… it usually turns epi pen use from a hospital admission into an ER catch and release), the pistol, and the spare mags. I keep my epi trainer right next to my blue gun, for practicing muscle memory, because it’s amazing how stupid I can get and how fast fine motor control goes.

I know people on long-term pain management. With opioids. One of the side effects of long-term pain management on opioids is funky kidneys, which means the user can go into an overdose situation without knowing it. But do long-term pain management doctors prescribe Narcan knowing that eventually the patient is going to have an overdose issue? Nope. So the patient goes to the ER and the ER staff treats the patient like some street-drug user, usually very negatively. Burgers and buns: Those who are old enough will remember when Burger King started advertising “Have it your way!” and the smarty pants guys would order a Whopper, hold the bun. Now that’s no longer a joke.
Gluten: American wheat is now highly hybridized. This is the result of several factors including reducing the height of the wheat stalk to allow easier harvesting, reducing field waste of the tall stalks and desiring more laboratory verified nutrition. The result is that the gluten in each grain is increased significantly giving a greater impact on the body. This is similar to the more powerful marijuana that is being produced today instead of that which was popular decades ago. Some folks like the social standing gained by saying they are gluten free and others have physical reactions from eating too much gluten. The latter are usually polite and don’t tell you.

Explain it in small words. The wheat we eat now is not genetically the same as the wheat everyone ate years ago. The gluten isn’t the same.
Today’s wheat has been genetically modified to grow shorter, more club-shaped which allows (or causes) it to put more energy into producing food than a long stem. The ancient wheat (called Einkorn) looks different: the grains are smaller, and when you see them side by side it’s obvious they’re different. The vast majority of the wheat grown now is Borlaug wheat, named for Norma Borlaug, “invented” in the 1960s and is credited with saving billions of lives. He won the Nobel Peace Prize and more for saving so many lives.
I have no doubt that a lot of the complaints about gluten are “I’m so special” egotism, and the “gluten-free!” labels on things that never, ever contained gluten are insane. But the Einkorn vs. Borlaug wheat is the germ of truth behind it. (See what I did there? And I didn’t even say the “wheat bred” that way.)
I still laugh at the “gluten-free lap dances” sign, but I’ll admit what you’re saying has a single grain (ein korn) of truth to it…
Have you ever baked with einkorn? There’s a couple of farms in Italy growing it for export, and it’s fascinating! Also, dealing with the weak gluten does a lot to explain why most old breads were disk-shaped, and why we put 10,000 years of selective breeding into evolving it to the pre-Borlaug wheat we had.

Gluten. Not an issue for us. That said, wife and I do enjoy the “Protein Wrap” at In-N-Out, inspired by my wife’s recent medical adventures that dictated a low sodium diet. I am following suit just for G.P. I find the less salt I use, the less I want. A nurse told us that our taste buds are replace about every 10 days. I encourage everyone to read food labels and do the math. My wife is small in stature and lost 20lbs while in the hospital, all retained fluid water weight. She feels far better now than in the past couple of years.

When I returned from Asia, I found Western food inedible for a while because of the salt. The only salt in Asia comes from soy sauce.
Forgot to add: As already noted, our wheat today (with rare exception) is not our grandparents wheat, which follows on to the flour and bread sold in stores. I would really like to try a loaf of bread made from fresh stone ground flour from unmodified wheat.

Gluten; recently entered my eighth decade. Ate wheat bread from the time I was old enough to hold and eat half a sandwich. March 2021; took two alleged Covid vacs. Within six months had Celiac disease and lost 20% of my body weight ( didn’t need to lose any). Stopped eating away from home because hitting the restroom was imperative before the meal was over and that’s always risky. None of this is fun and being trendy is of no value. Non-gluten buns suck so I eat burgers bunless. Wheat beer is out of the question. I’m pretty much done with vaccinations except for tetanus, when needed.

Regarding modern bread, I remember as a kid, that when a loaf was left out it would get moldy fairly quickly. When my mom had to go into a nursing home, I was getting her stuff in order and I found an unopened loaf of whole wheat that still looked fresh, even after it had been sitting about a month. I found it interesting that I could not see any mold so I set it aside to watch its progress. Two and a half years later I was able to bring mom home and I showed her the miracle bread. We decided to open the bag and check it out. No mold at all. The bread had dried out, but was visually perfect. If mold can’t live off it, I could see where humans might have difficulty digesting it. It was in a standard bread bag with a twist tie and was kept at room temperature.

Photography during dark sections is, well, dark. When the mood is lighter or gooder, the lighting is lighter.

Gluten Free? Yes, it is an issue. And it’s become an issue due to the (insert obligatory conspiracy theory) fluoridation of our water and food supply. Which has resulted in lots of people developing thyroid issues. Why? Because you use fluoride to suppress or destroy thyroid function. What does the thyroid help control? Auto-Immune Disorders, like… allergies. So that’s why some food allergies have become more prevalent in the last 50 years.

Their ‘Pancake and Baking Mix,’ which is a self-rising flour, makes the best pancakes and quick breads I’ve ever tasted. The ‘Pizza’ flour is finer than the bread flour and acts mostly like real pizza flour.

Using the unique “Beans’ Family Gluten Recipe” I can make bread and pizza dough that has good ‘sponge’ formation, isn’t rock-hard or crumbly, and actually can get real bubbles and imperfections like real bread. It’s a little sweeter than ‘real’ flour, but it works.
Bread: Fluoride and Monsanto – plausible, but not convinced. We’ve been fluoridating since the ’50s,
IDK why it would have taken so long to show up. Plus, we only really do it in the cities, I don’t think
I ever met anyone who fluoridates their own well water. As for Monsanto and the admittedly somewhat
sketchy engineered wheat, well, it’s not as though “natural” food is really any better, automatically. Or
that anyone has eaten “natural” grains in many thousands of years. When we domesticated that stuff,

wild ancestors since we figured out how to work bronze, anyway. A reasonable culprit in the fancy modern
grains would be the built-in pesticides, but Humans are scavengers and considering all the crap we eat,

Hypothyroidism diagnosis exploded in the early 1960s. It takes years of low-level fluoride treatment to kill a thyroid. So fluoridation starting in the late 1950s, hypothyroidism showing up hugely in the early 60’s, timeline works out.

As to your hypothesis about modern medicine keeping kids and marginal people alive better, that is a factor. We have people alive here in the US that would be dead anywhere else in the world. So our marginal people are skewing our national statistics.
I’m not knocking the idea really, Beans. Like I said, plausible. The previous standard of
“don’t be a whiner” could also have suppressed the obviousness of the potential effects
for a lot of decades.
